Happy Birthday Cubbie Bear!

Tonight in our Awana Cubbie's class, we celebrated Cubbie the Bear's birthday. Who doesn't LOVE a birthday party? The kids had a great time with all of the decorations, party hats, favors, & especially decorating  their own cupcakes, made by Mrs. Paula, and ice cream with sprinkles, chocolate, oreos, and gummy worms. Sorry parents for all the sugary snacks tonight :) We had a great lesson learning about God's promise to Noah and that His "word is true from the beginning..." Psalm 119:160. Our "promise" to the class was fulfilled when we were able to celebrate with Cubbie.

Baked Meaty Manicotti

All I have to say is "YUM" I love Italian food and this "new" dish to our family was no different. I adapted the recipe from the VMGR-252 2006 Family Cook Book
Below is "my" recipe

Baked Meaty Manicotti

Ingredients

Manicotti Noodles
Ground Beef
2 cloves Garlic, minced
 1/2 block cream cheese
1 cup Mozzarella cheese
1 cup Parmesan cheese
1 cup Romano cheese
Dried oregano
1 jar spaghetti sauce

Cook Manicotti noodles according to directions (until soft, yet firm enough not to tear). While those boil, preheat oven to 350 degrees and then cook ground beef and garlic until brown and crumbling in a pan on the stove. Add cream cheese and stir in as it melts. Add in 1/2 cup of each mozzarella, Parmesan, & Romano cheeses, mix in until melted. Add a few dashes of dried oregano. Mix. In an oven safe dish, spoon a about 1/4 of the jar of spaghetti sauce on the bottom. Fill cooled, cooked Manicotti noodles with cheesy ground beef mixture and lay them side by side in the dish. Pour the remainder of the spaghetti sauce on top of the filled noodles. Then add the remaining 1/2 cups of mozzarella, Parmesan, & Romano cheeses. Sprinkle a few dashes of oregano on top and bake for approximately 15-20 or until sauce is hot and cheese is melted.

Dish out and ENJOY!!

Being "4" can be rough!

Today was David's 4 year well visit. He has grown rather fond of going to the doctor over the last year or so, but I knew that today may be the end of that. I was preparing him for shots, but boy oh boy I couldn't have possibly prepared him for 5, plus a finger stick! The entire appointment went well and he was such a sweet young man for all of the checks and tests, we especially had fun watching him do the hearing and vision tests. The finger stick came as a surprise to both me and David. I just had one myself about 2 weeks ago at the OB, so I remember that it does in fact hurt! Poor little man endured it well, with plenty of tears shed. After that was the actual physical part with the doctor,  David did great and I loved the doctor that David saw, he was so sweet. Then came the dreaded moment. 3 in one thigh and 2 in the other. It was heartbreaking to him him cry, "owie! it hurts!" but he and I both were brave enough to get through and now he is DONE for a very very long time. The nurse was very sweet to and rewarded David plently with a squishy light up "sun," a matchbox car, a lollipop, a sticker, and a t-shirt that says, "I've been vaccinated adn I survived. Now I am cool for school!"
This afternoon we recovered with some Chick fil A and Bambi on the couch together. David legs were really sore, as expected, and he was so cute walking around the house like an old man, or a pregnant woman, :) needing help with almost everything. I enjoyed taking care of him and both of us had lots of shared giggles as we made it through the day :) What a big boy we have on  our hands.

Thankfully he wasn't too traumatized. Later that evening he took out his toy doctor kit and took Jim's blood pressure, checked our heart rates and gave out a few shots of his own, while saying, "Don't worry it won't hurt" :)

Weekend with Grandpa & Gramma

Friday afternoon Jim's parents came into town to spend sometime with Jim & David while I was at the Ladies Retreat. From what I hear they had a wonderful time together! See you again in about 6 weeks!

Smart Start Basketball Conclusion

Last Wednesday evening was our final Smart Start Basketball practice. It has been so much fun for all of us and we really learned so much together. It was an extremely busy week for us with Revival, Basketball, Jim's work events, etc. but phew we made it...Here are a couple of pictures from our last basketball day.

David's Birthday Lunch & 235th Marine Corps Birthday Ball

Yesterday Jim got home from work early enough to take David out to lunch for his birthday. We decided to take him to Texas Roadhouse because in the past we have gone and they will sing and take a Polaroid picture. Unfortunately we didn't get those things, but they did bring out David a special ice cream and brownie Birthday dessert, which we all shared. YUM. We tried explaining to David that this day was the actual day he was born, November 9th, but he was convinced that because he has already had a birthday party that he ALREADY was 4. I kept trying to explain, but he was certain in his mind that he was 4 because he had a birthday party already, so fine :)
That night we had Jim's new unit's Marine Corps Birthday Ball at the New Bern Convention Center. The ceremony was very nice and everything was put together so well. We had a nice time out together. My personal favorite parts were that they actually had instrumentalists playing all the ceremony music, not a recording and the cake was DELICIOUS! :)

4 years and growing...Happy Birthday our gift from the Lord

Birthday Party Continued: Navy VS. ECU game

After David's birthday party on Saturday we headed to Greenville to watch the Navy vs. ECU football game. It was an absolutely perfect afternoon for a game, until the sun went down and the clouds rolled in :) We enjoyed every minute of it!!!

This was the score when we decided to head home. It was really getting cold and the rain was about to open up on us. As we were walking to our car we heard ECU score one more time and Navy score 2 more times! Great job Navy! Final Score: 76-35

Sunday afternoon after a wonderful Homecoming church service and lunch, Mom wanted to take a picture of me in a shirt that my sister Jamie bought for me when I found out I was pregnant. So now I can officially have a 29 week picture posted. My, my how I am growing!!

When it was time for David to wake up from his afternoon nap to get to choir practice I went into his room and THIS is how I found him!! He had found his new clip on tie and had clipped it onto his white t-shirt sometime before falling asleep! HAHAHAHAHA! This still makes me laugh uncontrollably!

What a fun and exciting weekend. We are so glad that Grandma Van was here to celebrate it all with us! We love you and see you again in about 11 weeks!! XOXO

Happy 4th Birthday David!!

Today is David's 4th Birthday! I can hardly believe how quickly time has gone by. He truly is proving to be changing from not only a baby, but from a toddler too. Now we officially have a preschooler! WOW. We celebrated his big day on Saturday during lunch time. Thanks to all the help from Jim and my Mom and to all our friends who were able to come celebrate with us; we had a wonderful time all around! Happy Birthday our precious boy, God has truly given us a special gift in you! We Love you so much!!
